Banana Sheet Cake Recipe

I’ve had this recipe ever since I graduated high school. My momma gave me a recipe book of family favorite recipes as a graduation gift. Yeah that’s right, I got a recipe book for my graduation present! No glamorous, magical senior trip or gifts for me, haha. I’m surprised my parents didn’t give me a suitcase and helped me pack and move out, haha.

Banana Sheet Cake

Ingredients

  • 3/4 cup butter, softened

  • 1 3/4 cups sugar

  • 1/2 cup brown sugar

  • 3 large eggs

  • 2 tsps vanilla

  • 3 ripe bananas

  • 2 tsps lemon juice

  • 1 1/2 cups buttermilk

  • 3 cups flour

  • 1 tsp baking soda

  • 3/4 tsp baking powder

  • 1/2 tsp salt

Directions:

  1. Oven to 350! Get a big bowl or kitchen aid, cream that butter, 1 ¾ sugar and ½ cup brown sugar for 4 minutes until it's light and fluffy.

  2. Add the eggs one at a time, gradually mixing, then add the 2 tsp vanilla.

  3. In small bowl, mash those ripe bananas w/ the 2 tsp lemon juice. Add to the bigger bowl and mix it. Then stir in 1 ½ cup buttermilk.

  4. Dump the 3 c flour, 1 tsp baking soda, and ¾ tsp baking powder and ½ tsp salt until evenly mixed through. Pour into a greased baking sheet. Evenly spread it round and round. Bake for 20-22 minutes or until a toothpick comes out clean in the middle. LET IT COOL BEFORE FROSTING, trust me.

Cream Cheese Frosting

Ingredients

  • 1/2 cup butter, softened

  • 2 packages cream cheese, softened (8 oz. packages)

  • 4 cups powdered sugar

  • 2 tsps vanilla extract

  • 2 tbsps Tablespoons heavy whipping cream (milk can work too)

Directions:

  1. Cream the butter and cream cheese together for 3-4 minutes until it's fluffy like a magical cloud.

  2. Add the powdered sugar and vanilla and mix it (I highly recommend an electric/handheld mixer).

  3. Add heavy cream/milk until consistency is smooth. Spread the frosting over the cake!
