Ingredients:

  • 1/2 cup (1 stick) salted butter, softened

  • 3/4 cup packed brown sugar (or 1 cup)

  • 3/4 cup granulated sugar (or 1 cup)

  • 1 1/2 cups creamy peanut butter (NOT all-natural)

  • 3 large eggs

  • 1 tbsp vanilla extract

  • 1 1/2 cups quick oats

  • 3 cups old-fashioned oats

  • 1 tsp baking soda

  • 1 1/2 cups mini m&m's

  • 1 cup miniature chocolate chips (semi-sweet or milk)

Directions:

  1. Set yer oven to 350 degrees. Lather up a baking sheet with butter. Spray or a silicone mat works too.

  2. In a large bowl, or bowl up stand mixer with paddle attachment, toss in a stick of butter, 1 c brown sugar, 1 c granulated sugar, and 1.5 cups peanut butter. Mix until fluffy and pale in color. About 1-2 minutes. *To be totally real here, I personally use ¾ c for the sugars, because honey-that’s a shiz ton of suga! You do you though.

  3. Toss in the eggs and vanilla. Mix. Toss in all the oats and baking soda. Mix.

  4. Toss in the m&m's and chocolate chips. Stir together with a wooden spoon or spatula until combined.

  5. Dump da dough onto the cookie sheet and spread it out. Grab a kid to help you, this is the fun part! It helps if you dollop spoonful's of dough all over the cookie sheet (rather than schlop in the middle) and then spread it out.

  6. Bake for 17-20 minutes, but check at 15! Do not overbake these! The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools. Let cool for at least 40 minutes so the bars can firm up and come together. *They are way easier to cut after they cool down.
