Greek Chicken Kabob Recipe

Total Time: 50 minutes

This is a fun change from our typical canned chicken dinner (which I use way too often, shhh).

Chicken Marinade


Prep Time: 30 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 lbs chicken breast (cut into large bite-size pieces)

  • 1/2 cup plain greek yogurt

  • 3 tbsps extra-virgin olive oil

  • 3 tbsps fresh lemon juice

  • 1 tbsp red wine vinegar

  • 2 tsps dried oregano

  • 1 1/2 tsps salt

  • 1 tsp pepper

Directions:

  1. Cut chicken breast into large bite-size pieces. In a medium bowl, make the marinade by mixing greek yogurt, olive oil, fresh lemon juice, oregano, spices, and red wine vinegar. Toss the chicken in the marinade and refrigerate and let the chicken marinate for at least 30 minutes - 2 hours. *Totally cool if you leave it for a little more than 2 hours. Let them juices SOAK!

  2. After chicken is marinated, thread chicken on skewers. Add veggies like peppers or onions, if you need some more fiber in your life.

  3. Heat up that grill to medium-high heat. Clean your grill real good & for extra good measure you can lightly brush grill w/ olive oil. Did I do that?? No. Did my kabobs stick to the grill?? Just a lil bit ;) Cook until chicken is 165 degrees, about 6-10 minutes, turn skewers at least once.

Tzatziki Sauce


Ingredients:

  • 1 1/2 cups greek yogurt

  • 2 tbsps extra-virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tbsp red wine vinegar

  • 3 garlic cloves (finely minced)

  • 1 arge cucumber (peeled, finely grated, & squeezed thoroughly to get rid of water from cucumber!)

  • 1 tbsp fresh dill (chopped)

  • 1 tsp salt (or more to taste)

Directions:

  1. In medium bowl, mix together greek yogurt, olive oil, lemon juice, red wine vinegar, garlic, cucumber, dill, and salt. The trick is to squeeze out as much water from the cucumber as possible! I like to peel it, grate it (use the smallest grate hole possible), then “paper towel it” and squeeze the shiz outta it. :) Add seasoning & salt if desired. Keep chilled until ready to use. Serve with absolutely nothing or a lovely green salad, whatevah.
